This was a cake for the little daughter of a friend. She’s been talking about “butterfly fairies”, with butterfly wings, so this is what we came up with. Three tiers (tree is cake); chocolate fudge cake, with alternating layers of a no-bake chocolate cheesecake filling and banana cream; banana buttercream, then bittersweet chocolate ganache, and fondant finish. Gumpaste everything else. For dietary reasons, no gelatin anywhere, so wings were gumpaste.
